Blackcurrant Tart Ruffle Cake

A 5 1/2" mini layered almond and coconut sponge cake filled with blackcurrant jam and coconut buttercream. The outside was decorated using a petal tip to achieve the 'ruffles'. It was then topped off with coconut and a blackcurrant.

Cath Kidston Inspired 21st Birthday Cake

A two tier celebration cake inspired by Cath Kidston.

The bottom tier was a 9" cake made up of two layers of lemon sponge. This was flavoured with lemon juice and heaps of lemon curd and sandwiched together with more lemon curd and a layer of buttercream. The cake was then coated in blue buttercream and combed using an icing comb to achieve the stripes and the top was embossed with a paisley design. White fondant polka dots and red blossom flowers adorn the top and bottom of the cake.

The top tier was a 6" chocolate rocky road red velvet cake with biscuit, chocolate chips and mini marshmallows with blackcurrant jam and buttercream. This cake was decorated with buttercream roses.

The cake board was covered in red fondant and decorated with co-ordinating blossom flowers and fondant lettering. Finally the 'handmade with love' ribbon was added to the edge of the board.
